Cuisine is an important part of your eco retreat experience. We take great care to make it a most memorable part of your vacation retreat.

 

Eco Cuisine Philosophies

Our cuisine philosophy is a merger of many: Slow, whole, simple, really tasty ingredients combine to create culinary delights that are good for you and good for the planet.

We have also borrowed from Graham Kerr's philosophy of “great food wrapped in caring and love”. Our cuisine is created and and consumed within the olden spirit of a “gathering place”.

 

 

Participation in cuisine creation provides an up-close-and-personal relationship with the food you eat: It is another way to connect with the earth, with your own nourishment, and with your eco grounding experience.

We believe in cooking with FABIS (Freshest and Best in Season) ingredients.

We believe that food is best prepared with love.

We believe in practicing sustainable food growth, and supporting local food
growers who share our vision.

We believe that each meal should be a celebration.

Eco Culinary Ingredients

Great cuisine commands great ingredients. Experience 'digging in the dirt' in our on-site organic garden, harvesting fruits, veg, and herbs for daily meals, and enjoying another way to bond with our earth.

From tree to table, from quality local suppliers, and from our own hands, we prepare mouth-watering culinary delights, wrapped in caring and love. Vegetarians, vegans, and those with special needs are lovingly accommodated to make their cuisine creation activities wholly fulfilling.

The organic garden is an important feature at our wilderness lodge retreat. Not only does it provide the basis for most of our delicious cuisine, it also provides an important link we miss in today’s world between man and mother earth. We gain sustenance from tending the garden in the most sustainable way. Each minute spent “working” in the garden provides nourishment for the earth, our tummies, our minds, and our souls.

There really is no way to adequately describe the taste of freshly-harvested produce: the incredible mouth-watering flavour of a sun-warmed strawberry... a just-picked tomato eaten like an apple... a carrot still moist with earth. You will experience these sensations yourself.

Fresh from the organic garden, vegetables abound. Fresh from our small orchard a fine selection of seasonal fruits and berries abound. Fresh from the Fraser River, salmon abounds. Fresh from local markets, other wholesome ingredients abound such as organic grains ground locally at Anita's Mill.

There is always a few who do not enjoy kitchen pursuits... you may be a gatherer, or maybe you just want to sip a glass of fine BC wine as you look upon the food preparation by your mates.

In whatever way, your connection with your meal's creation is paramount to the fullness of your enjoyment. You will flush with fulfillment at having joined in their making.

Meals and Beverages

Our menus change depending on each day, each season, and according to guest desires.

We follow the FABIS (Freshest and Best in Season) method of designing our menus with mother nature providing the most basic ingredients at her whim.

All meals and beverages are included for all-inclusive guests
(Shelter from the Storm package).

Breakfast is included for Lay Down Sally; additional meals may be arranged.

Morning indulgence ~ Warm beverage of choice served in bed
Breakfast ~ Served al fresco in the riverview belvedere
Lunch ~ for fully-hosted packages – served on the trail
Tapas ~ late afternoon finger food
Dinner ~ full course cuisine including desert

In addition to soft beverages available at any time, a modest selection of local organic and other fine wines and beers are served with tapas and dinner.

 

A Sample Day

With the exception of your “Morning Indulgence” brought to you in bed, participation in cuisine creation provides an up-close-and-personal relationship with the food you eat: It is another way to connect with the earth, with your own nourishment, and with your eco grounding experience.

Early risers are encouraged to watch the sun rise at Sunshine Point with a warm beverage.

Morning dress code is casual...your pajamas and our warm robes are not only acceptable, but encouraged. We especially look forward to the many variations of “bed-head” every morning. Afghans are provided as extra wraps at Sunshine Point as it tends to be cool before the sun warms the day.

Where we eat plays an important role in food enjoyment. Morning and evening meals are eaten in the riverview belvedere under the forest canopy surrounded by nature.

Luncheon is generally eaten along the daily path in the forest, riverside, or on a beach, depending on each day's journey.

Tapas are served during the gathering for dinner preparation at the Central Lodge outdoor deck and kitchen.

Good wine complements your dining experiences. A modest collection of organic, BC VQA (Varietal Quality Assurance), de-alcoholized, and other fine wines are always on hand. Organic lager and ale is also supplied for non-wine lovers.

A modest variety of eco snacks and beverages are available at all times in the library-living room area to be enjoyed throughout the day.
